Each confection is handmade in small batches with a smooth, flavorful ganache center, then carefully coated in high-quality Belgian chocolate. Our caramels are handcrafted in our confectionery kitchen with the same care, transparency, and attention to detail that define everything we make at ChocMo. Each batch begins with a slow-cooked, chewy caramel made from thoughtfully sourced ingredients, carefully balanced to achieve a rich, buttery texture without being overly sweet. Once cooled, each piece is enrobed in premium Belgian chocolate, creating a smooth contrast to the caramel’s depth and warmth.
Finished with a delicate touch of flaked sea salt, these caramels offer layers of flavor that feel both familiar and gently unexpected. l’atelier tr gift boxes
Our L’Atelier TR bon bons are crafted as small works of edible art, where technique, flavor, and design come together in every piece. Each bon bon begins in our Poulsbo kitchen, where our chocolate team carefully builds thin dark chocolate shells and fills them with smooth, richly layered ganache centers. From there, every piece is finished by hand with vibrant cocoa butter designs, creating chocolates that are as visually striking as they are refined in flavor.
These bon bons are made in Poulsbo and shared at both of our locations — ChocMo Chocolatier & Café in Poulsbo and our L’Atelier TR shop on Winslow Way in Bainbridge Island — offering a distinctly elevated chocolate experience rooted in craftsmanship, creativity, and care.
